super green soup

This is a really easy and nourishing recipe. Lots of soups don't contain protein which is why they often don't fill you up. I always add beans or lentils to mine as a base to add that protein hit that will sustain your fullness throughout the afternoon. 

Ingredients (makes 4 portions)

1 bag spinach 

1 head of broccoli (chopped)

1 shallot 

1 clove garlic

1 tsp cumin seeds

3 large handfuls of frozen edamame beans (you can also use a rinsed can of white beans or frozen peas which are also high in protein)

1 lemon

large handful of mint (leaves picked)

salt and pepper

Method:

Soften the garlic and shallots on a low heat with the cumin seeds

Add the broccoli and fry for a further few minutes 

Add the beans and then cover the broccoli and beans with water and add a vegetable stock cube

Cook for 3-4 minutes until the broccoli is soft then add the spinach, mint and lemon juice and season well

Blend until smooth and add more lemon and s&p to taste!
