tumeric tofu with brown rice, sweet potato, cauli and kale

This is a great lunch or dinner that's warming and filling - it's an easy dish to throw together in the oven and the colour from the turmeric gives it some real sunshine colours. 

INGREDIENTS

Serves 2

1/2 Cauliflower

2 sweet potatoes

1 box extra firm tofu

2 large handfuls kale

1 small cup brown rice (I used short grain)

For the tofu marinade

1 teaspoons turmeric

1 teaspoon honey

2 teapoons peanut oil

1 large splash of soy sauce

For the dressing

3 teaspoons extra virgin oil

2 teaspoons lemon juice

1/2 teaspoon apple cider vinegar

1/2 teaspoon turmeric

1 teaspoons tahini

1 clove roasted garlic

1 teaspoon honey

Rinse the brown rice under the tap and put on the hob to boil - this should take around 30 minutes

Cut the sweet potato & cauliflower into chunks, season and then lightly cover in olive oil and put in the oven in the roasted garlic cloves to roast on a medium heat - turn them over frequently and cook for around 30/40 minutes or until they are soft and golden. 

Marinade the tofu and then add to the oven 15 minutes after the cauli and potato and roast for 15/20 minutes until it turns slightly golden. When you do this remove the garlic cloves from the oven ready for the dressing.

Mix all the ingredients together for the dressing.

Once everything is ready toss it all together with the dressing in a large bowl and divide into dishes. Add coriander and sesame seeds on top and enjoy!
