kimchi rice brunch bowl

I say this is a brunch bowl but it can just as easily make a quick dinner too! Kimchi is basically spicy fermented cabbage and is so delicious and full of beneficial bacteria that are loving for your gut and can help to boost your immune system and overall health. It’s a really nourishing, filling and punchy dish and a great one to make if you’re feeling in need of some comfort food which will help to restore you if you’ve had a late night.

INGREDIENTS

Serves 2

1 cup rice

1 thumb ginger

1 clove garlic

1 leek

broccoli

kale

2 table spoons kimchi

2 free range organic eggs

1 avocado

1 large handful unsalted raw cashews

1 table spoon sesame seeds

dash tamari

coriander

lime

METHOD

Put the rice on

Meanwhile sweat the leeks, garlic, ginger in a pan with a dash of tamari once soft set aside. Add the broccoli and kale with another dash of tamari and stir fry until cooked but the broccoli still has a crunch. Remove and set aside and add the cashews and sesame seeds until they are toasted, set aside.

When the rice is almost done add the eggs and cook for a further 8-10 minutes

Slice the avocado

When the eggs are done drain the rice and eggs, shell the eggs and put the rice into a frying pan with the cooked garlic, ginger and leeks and the kimchi and heat through

Add the rice to a deep bowl and arrange the veggies, eggs, nuts and avocado on top

Squeeze a lime over the top and add a sprinkle of coriander
