artichoke and cauliflower soup

This is a nice easy & warming winter soup – I added bits and bobs on top but is perfect as is.

4 Jerusalem artichokes (chopped into small chunks)

½ cauliflower (chopped in small chunks)

2 sweet potatoes (chopped into small chunks)

vegetable stock (2 x pints) add more water to cover veg if needed

1 teaspoon miso

half a cup of oat milk

3 cloves garlic

1 thumb ginger

2 dashes of soy sauce

2 shallots

1 leek

add – toasted pine nuts with chilli flakes

coriander

yoghurt ( I used coconut yoghurt)

Sweat diced shallots, ginger, garlic, ginger in large non-stick soup pan on a low heat

Add the diced vege and sweat with the onions etc for 5 minutes on a low heat

Add the stock and leeks and simmer until all the vege is soft then add the oat milk

Add the miso and soy and blend
