Salmon & avocado sushi bowl

This omega-3 rich poke bowl is such a winner for a quick summer dinner, fresh, nutrient-packed and super delicious!

INGREDIENTS

Short grain brown rice (cooked as per packet instructions)

Sushi grade salmon (skin removed and cut into chunks)

Avocado  (cut into chunks)

1/2 Cucumber  (cut into long strips with a peeler)

1 Carrot (cut into long strips with a peeler)

2 handfuls of edamame beans

Radish (finely sliced)

Coriander for garnish (finely chopped)

Sesame seeds for garnish

Dressing:

  • 2 tbsp tamari

  • 2 tbsp sesame oil

  • 2 tbsp mirin

  • Half a chilli

  • Spring onion 

  • 1 tsp honey

  • Juice of 1 lime

  • Grated ginger

METHOD

Cook the rice

Place the fish, avo, cucumber, carrots and radishes in a bowl, pour over the dressing and mix well

Assemble the dressed ingredients on top of the rice in a bowl and top with the edamame, coriander and sesame.
